Ah the genius of cookie sticks! So versatile: you can dunk them into a delicious cookie dip, pack it as a lunch box treat or simply chomp on a couple as a midnight snack. Perfect with a glass of milk too. Simple to make and a perfect present for anyone. I love the endless variations this recipe offers. This is now become my go to recipe. The version I might be sharing with you today may be just a simple combination of white and semi sweet chocolate chips but I do have some suggestions on how you can take this up a notch:
– Almond Cookie Sticks: Use 1/2 teaspoon almond extract and a generous topping of 1/2 to 3/4 cup chopped almonds to garnish on top. – Peanut Butter : Use 1/4 cup of peanut butter and top with a combination of peanut butter and chocolate chips – Nuts: Top with 1/2 cup of your favorite nuts – think walnuts, hazelnuts, pecans or a combination of them. – Hazelnut: Replace 1/2 cup of the flour with ground hazelnut and top with a combination of chocolate chips and chopped hazelnuts. – Orange and Cranberry: Add the zest of an orange – about 1/2 tablespoon along with the wet ingredients and wee 1/2 cup of dried cranberries on top. – Berries and White Chocolate: Top with a generous helping of dried cranberries or blueberries and white chocolate.
Kitchen Tip: The batter might be more liquid than the regular drop cookies but don’t let that alarm you. It take shape within minutes of being in the oven. Also, remember not to spread it too thin but remember that you want to bake it on a cookie sheet which has room for it to spread and bake evenly.
I baked you two variations: The simpler one has an assortment of chocolate chips – white, semi sweet and peanut butter.
- ½ cup canola oil
- ½ cup sugar
- ½ cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
- In a large bowl, combine the oil, sugars, egg and vanilla. Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well.
- Divide dough in half.
- On a greased baking sheet, shape each portion into a 15-in. x 3-in. rectangle about 3 in. apart. Sprinkle chocolate chips and nuts if desired over dough; press lightly.
- Bake at 375° for 6-7 minutes. (Bake for 8-9 minutes for crispier cookies.)
- Cool for 5 minutes. Cut with a serrated knife into 1-in. strips; remove to wire racks to cool.
But it is the second variation that is a personal favorite – Biscoff Kissed Cookie Sticks. I used 1/2 cup of biscoff spread in the batter and baked it plain. Only during the last 3-4 minutes, I used a few crushed dark chocolate kisses to top the batter. They tasted phenomenal.
- ½ cup canola oil

- ½ cup packed brown sugar

- ½ teaspoon salt
- 1 cup crushed dark kisses candy
- Preheat the oven to 375F and line a baking tray with parchment paper.
- In a large bowl, combine the oil, biscoff spread, brown sugar, sugar, egg and vanilla.
- In a medium bowl, sift together the flour, baking soda and salt.
- Add the sugar mixture slowly to the flour mixture and mix well.
- Divide dough in half. Spread on a greased baking sheet, shape each portion into a 15-in. x 3-in. rectangle about 3 in. apart. Bake for 6-7 minutes. A minute before the cookies are done, spread the crushed dark kisses and press slightly.
- Cool for 5 minutes. Using a serrated knife cut into 1 inch strips.
