If you’ve just tuned in, we’re in the midst of a quick bread series. The series started with coconut bread with a cream cheese frosting and we baked a Whole Wheat Pumpkin Spice Bread and Spiced Maple Banana Bread. Today, we’re baking a Rosemary Chocolate Chip Bread.
The original recipe is an Olive Oil Cake from Good to the Grain and it has been marginally adapted. There was an option of using spelt flour, which I substituted with part wheat flour and part rice flour. The pairing of rosemary and chocolate is unique, delicious and memorable.
Rosemary Chocolate Bread

Ingredients
- ½ cup whole wheat flour
- ¼ cup rice flour
- 1½ cups all-purpose flour
- ¾ cup sugar
- 1½ teaspoons baking powder
- ¾ teaspoon kosher salt
- ½ teaspoon ground coriander
- 3 eggs
- 1 cup olive oil
- ¾ cup milk
- 2 tablespoons chopped fresh rosemary
- 140 grams (5 oz) bittersweet chocolate chips
Instructions
- Preheat oven to 350F. Grease and flour your loaf tin.
- In a large bowl combine the flours, sugar, baking powder, salt and coriander. Set aside.
- In a separate bowl or measuring, whisk the eggs thoroughly. Add the olive oil and whisk until incorporated.
- Add the milk and rosemary and mix again just to blend.
- Pour the wet ingredients over the dry, stirring gently to combine.
- Stir in the chocolate chips until evenly distributed.
- Bake for 20-25 minutes, or until a skewer inserted in the middle of the loaf comes out clean.
- Cool for 10 minutes and serve warm

I. Love this piney herb and love the scent and flavor it infuses be it on meats or breads. But with chocolate chips? Hmmm what an interesting marriage. Would so love to have it for breakfast right now hihihi.

Instead of chocolate chips do you think roughly chopped chocolate would work too? I always worry that the small pieces just get destroyed. Or are you supposed to have all chocolate pieces the same size?
Hey S! Thanks for stopping by! Chocolate chunks would do to! But if you chop them too small then they might just melt and lose their shape so a medium size would be perfect. They should be more or less the same size. Exact would be just too much trouble.
The flavor combination is so unique, I want to make this just out of curiosity. I also think that the 3 flours would give this some wonderful texture. I have yet to make olive oil cake, but this intrigues more than that recipe. It looks very moist and delicious in the picture. Thanks for sharing!
Thanks Tina! You’re absolutely right! The original recipe called for spelt flour and I substituted that with a combination of whole wheat and rice flour which did add so much to the texture of the bread. I plan to give the spelt flour a chance the next time round.
I love the idea of using rosemary in something sweet. I added rosemary salt to a treacle tart recently but have never tried it with chocolate…am going to give this loaf a go! Looks like the olive oil keeps it beautifully moist. Another great recipe in this run of posts! :-)

Your photograph looks really pretty with the contrasting chocolate studded through a yellow cake. I haven’t tried rosemary with chocolate yet, but I made a very successful lavender and chocolate cake, so I imagine it would be on fairly similar lines.

U know I was under the impression that rosemary is meant only for meat and savory food. But once I used it in a pound cake and ever since then it became my fav herb for bread and cake.
