I spent the last two weeks at the dentist. No. Two excruciatingly painful weeks at the dentist. Little or no food has passed my lips since then given the myriad instructions, “don’t eat hot; don’t eat cold; don’t eat spicy; don’t eat meat; don’t eat.” The only option I had left was steamed fish with herbs. Luckily, I like steamed fish with herbs.
Now, on the road to recovery, I chose these decadent, soft muffins for this week’s recipe which comes from Martha’s kitchen (yes, Mrs. Stewart and I are on a first name basis. Ha.) I reformed her chunky apple muffins to my Apple Cinnamon Crumb Muffins for two reasons: 1. My teeth still hurt and I’m avoiding all things chunky and 2. My husband is not a big fan of apples (and not a fan of unscientific old proverbs either) so chunky would be a total turn off for him.
These muffins are tender and soft. I chopped the apple up into tiny pieces ensuring there’s some in every bite. Also, reserved about 1-2 tablespoons and added it on top before sprinkling the crumb topping. I avoided the nuts entirely. The crumb topping was a simple whisk of cinnamon, butter, sugar, flour and butter and comes together quite easily.
Over to the recipe: A sugary-cinnamon-y crumb topping, soft and tender muffins making just the perfect breakfast treat this morning.
- FOR THE TOPPING
- ⅓ cup light brown sugar
- ¼ cup all purpose flour
- ½ teaspoon ground cinnamon
- 1 tablespoon butter, melted
- 3 tablespoons diced apples
- FOR THE MUFFINS
- 1 large Granny Smith apple, peeled, cored, and chopped (keep 2-3 tablespoons of the chopped apple for the crumb topping)
- 1 cup sugar
- 2 cups all purpose flour
- 2 teaspoons baking soda
- ½ teaspoon salt
- 1 tablespoon cinnamon
- 2 large eggs
- 1 cup buttermilk
- ½ stick unsalted butter, melted
- Preheat oven to 400 degrees. Prepare a baking sheet with muffin cups.
- FOR THE TOPPING
- Combine all ingredients except apples in a bowl and mix with a fork until crumbs are formed. Refrigerate the mixture.
- FOR THE MUFFINS
- In a large bowl, whisk together the sugar, flour, baking soda, salt, and cinnamon in a large bowl. Add chopped apples.
- In a measuring jug or small bowl, whisk together the eggs, buttermilk, and butter.
- Gently add the egg mixture into flour mixture. Do not overmix.
- Fill each muffin cup about ¾ full.
- Top each muffin cup with apples and then the crumb topping
- Bake in the oven for 16-18 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the muffins to cool slightly, about five minutes, before removing them from the pan. Transfer to a wire rack to cool.

Beautiful and buttery looking! I am sure the bits of apple under the crumble make it look even more delectably juicy than usual.
Here’s hoping your tooth issues are over and you can start enjoying all food again, but these muffins are no doubt welcome compensation for whatever else you still can’t eat.

Love anything with streusel topping!
These are some killer looking muffins and I love the crumble on top. Sorry about your dental problems, ouch, nothing worse than dental issues. BTW Congrats on the Top 9 for your #Sunday Supper addition.
Thanks Suzi! :)
Oh, my mouth feels for your poor mouth! It’s amazing we actually sit down in that dentist chair and pay them to torture us! Unfortunately most of us are kinda attached to our teeth, and that’s the price to keep that relationship going. Nice recipe. We’re doing little baking at the moment (too hot!) but this one is a keeper. It’ll be particularly nice with fall apples. Good stuff. Thanks, and hope your mouth is feeling better.
Hope your teeth are doing better! These crumb muffins sound like a wonderful breakfast =)
Ugh. There is not much worse than the dentist. So glad you are feeling better and back in the kitchen! Any crumb muffin is my favorite choice :)
These muffins look delicious. Love that crumb topping too!
I can relate about the dentist visits, not fun at all!! I can only imagine how much these muffins help make up for the pain you endured. ;-)
Hope your feeling better, (hate the dentist). super jealous of you and martha being so close..
Oh, may I have two…dozen?!!!! They look warm and buttery! I can ALMOST taste them. yuum!
These dont turn out so well. I tried this a few days ago. The muffins are soft but there’s too much cinnamon which makes for a bitter aftertaste. Also, more sugar and more apple might make them taste better.
Was disappointed with the result of this recipe.
Hi Sanjeet. Sorry these didn’t turn out well for you but the recipe worked very well for me and the other bloggers. You can try making it without the crumb topping too if you like and reduce the cinnamon or avoid it completely. I haven’t made any drastic changes to Martha’s recipe so I wonder what went wrong.
Thanks for the tip – will give it a shot. Hope the pearly whites are back in action!
Heh. very much.
OMG!! I just stopped by to tell you these just came out of the oven and they taste amazing. I’m feeling sad that I have to send these to my husbands office. I’ll surely be making it again. Great recipe and the changes you made are perfect. i don’t like chunky apples so i followed your recipe exactly. thanks for sharing. Amanda from Virginia.
YAY!! Thank you, Amanda. So good to know that it worked out well for you!
These are truly lovely muffins! I love the crumble on top!
