And… drumroll! Put your party hats on people for we are celebrating a #BundtaMonth anniversary this month.
Lora and I decided to go with an open theme instead of – as we usually do – picking an ingredient. Our bakers have come up with the most phenomenal cakes to celebrate our 1st anniversary!
I chose to go with a Oreo Stuffed Dark Chocolate Bundt Cake. A buttermilk chocolate cake, guaranteed tender with bits of broken crunchy Oreos to provide a scrumptious balance.
Over to the recipe – Melt in your mouth dark chocolate cake with bits of Oreo and tiny celebratory sprinkles.
- 1 cup plain flour
- ¼ cup whole wheat flour
- ½ tsp baking powder
- ¼ cup cocoa powder {I heaped it}
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, room temperature
- 1 cup vanilla or plain sugar
- 2 eggs
- 100ml buttermilk
- 1 tsp pure vanilla extract
- 10-12 oreo cookies, roughly chopped
- Grease and flour the sides of a bundt pan.
- Preheat the oven to 170C | 350F
- Sift the flour with the cocoa, baking powder, baking soda and salt. Reserve.
- Cream the butter and sugar. Beat in eggs one at a time, followed by the vanilla extract.
- With beater on low add the flour and buttermilk alternately in three lots. Stir in chopped oreos.
- Bake for 50-60 minutes until the tester comes out clean. Cool and invert on a plate.
