Even though I tend to like my cornbread on the sweeter note, this recipe is quite versatile. A couple of changes and you could have yourself a savory treat too. These pair exceptionally well with a bowl of soup or chili, slathered with a delicious jam or butter for breakfast.
If you want to go the savory route I recommend bacon, jalapeños, herbs, corn kernels, grated cheddar – they would all make for great additions.
Over to the recipe: Soft and tender with a fluffy crumb – Honey Cornbread Muffins.
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ cup granulated sugar
- 1 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- ½ stick butter, melted
- ¼ cup honey
- Preheat oven to 400 degrees F.
- Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.
- Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden.

Nothing wrong with sweet cornbread! :) (I am a northerner through and through on this issue, northern American that is.)
Looks delicious!
Honey is a must in cornbread muffins! Love these!
I have to try this out… just need to get myself some cornmeal.
Great muffin choice, as always! I’d love to try this again with some jalapeño – YUM!
Cornbread is so good. I don’t make it nearly enough. I love it on the sweeter side too. Breakfast with raspberry jam or perfect pairing with soup. I am going to try a cornbread muffin for Thanksgiving this year.
Honestly I’ve never worked with cornmeal nor have I ever had cornbread.. so am intrigued with this recipe!! And thanks for the heads-up on the book… My photographs could do with bucketloads of improvements!!!
Thanks for this amazing recipe.
I love a good cornbread muffin. These look perfect for breakfast or anytime. :)
Hi Anu,
Your conrbread muffins look perfect! I also like honey on them. And as you’ve mentioned they make a great side to soups and chilli — my favorite way to enjoy them.
Thank you so much for the mention and kind words. I can’t tell you how much I appreciate you helping get the word out. Big hugs my dear friend:)
Your muffins have the perfect cornbread top, Anuradha! And I love that pretty cake plate!
Adore these little sweet cornbread muffins! You could have these any meal of the day! Breakfast, lunch, dinner!
Love these muffins and I loved the book title so much I went and bought it earlier. :)
Oh I would love to have about 3 or 4 of these with a big bowl of hearty chili! YUMMMM!!
I am making a big pot of chili for dinner tonight. My husband would love some cornbread on the side – I need to check and see if I have all of these ingredients in the pantry!
They look good enough to gobble up without sharing. :)
Delish! It reminds me of the cornbread they served with honey-butter growing up. Only with these you don’t need to both with the added step of buttering the bread!
I love cornbread. So perfect for breakfast, or dinner :)
These look so swee soft and delicious :D
Cheers
Choc Chip Uru
These look delicious! I wonder if they’ll work with agave nectar substituted in…
Love this muffin version so perfect for this season and honestly will be perfect for Thanksgiving. Absolutely lovely my friend!
Delicious! I adore cornbread and I’m always looking for new varieties. I have been adding maple syrup to my recipes but honey sounds grand! Thank you for sharing!
i just love baking and cooking with cornmeal. It has such an amazing texture and nice nutty but sweet flavor. these muffins look to die for
Now you are talking my language! I love cornbread and these little cornbread muffins are perfect to crumble on a bowl of chili or just eat right out of the oven. Definitely hard for me to resist these beauties!
I have made cornbread few times but don’t really like its texture. I wonder how it will taste in muffins.
I really like Nancy’s photography and already bought her book the same day she launched. Now I just have to find time to read.
They look so light and sunny!
I actually love sweet corn muffins! Honey is a great add.
I like my cornbread on the sweeter side (surprised surprise lol) – these look incredible! I haven’t made cornbread in so long, I need it with the chili I’ll be making this week!
I love sweet and savory cornbread. I would love a few of these today for breakfast. I can’t wait to give these muffins a try for a snack one day afterschool-love them:)
I love the sound of all of those filling inclusions actually! And I’m like you, a bit sweeter never hurts ;)
My husband has been working on his cornbread recipe and he would love this.
I love corn bread just about any way you slice it. This sounds like a nice and tasty variation, although adding bacon makes it that much better.
Thanks for telling me about Nancy’s book. I’ve been so busy I haven’t been able to stop by everyones blog but without question will pay a visit. Her photos are always incredibly gorgeous!
I love that you added honey to these!!
Lovely honey cornbread muffins! Such a nice side to pair with soup!
My cornbread muffins always tend to be sweet as well…but I’d love to make some that are more savory with jalapeno and cheddar. But before I go tweaking, I’ll try yours with the honey…yum, yum.
I’ve found you at last.. I wondered where you’d gone:) I’ve added my email so I get your updates.. You’ve probably been here for a long time.. but I your little logo caught my eye on another page. I love your new look!! It seems so does everyone else:) Lovely recipes and round up today!! Lovely everything!! xx Smidge
Thanks Barbara :)
I’ve never made cornbread from scratch, and did not know that honey plays an important role. Great to remember that. I like the idea of cheddar cheese in corn bread.. They must be wonderful when they come out of the oven!
You make the most delicious sounding muffins!
Oh, my, how I love cornbread. This looks divine.
A dangerous recipe, because they are definitely my weakness. I prefer them sweet too. However, savory with jalapeno may just be the trick!
