I have a question for all bakers (you qualify even if you bake occassionally): Do you have a jar that never runs out of cookies? I do. I try to make them in small batches so there is enough variety. It’s like a safety net, a box of joy to run back to. Is that normal behavior?
The cookies I bake are usually simple drop cookies that are not to cumbersome and time consuming to make. This week I decided to replenish the jar with a slightly sophisticated version of my chocolate chip cookie. The base of the recipe is simplicity cookified and welcomes additions of your choice. They are slightly thin but retain the chewy texture. The reason they’re thin is because I had no time to chill the dough. To get really thick and chewy cookies, all you need to do is chill the dough before you bake it. You could scoop it or put it in clingwrap and keep it in the fridge for a couple of hours.
Over to the recipe: Toasted nuts and sweet white chocolate combining to make the perfect tea time treat.
- 1 cup + 2 tablespoons all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon cinnamon (optional)
- ½ cup butter, softened
- ¼ cup + 2 tablespoons granulated sugar
- ¼ cup + 2 tablespoons packed brown sugar
- ½ teaspoon vanilla extract
- 1 large eggs
- 1 cup white chocolate chips
- ½ cup whole hazelnuts (can be replaced with walnuts or pecans)
- Preheat oven to 375F.
- On a baking sheet spread the hazelnuts and bake for 10-12 minutes until the nuts are slightly golden and aromatic. Let it cool slightly for 8 to 10 minutes. Chop the nuts coarsely and set aside.
- In a medium bowl sift together the flour, baking soda, cinnamon and salt.
- In a large bowl, cream the butter, granulated sugar, brown sugar and vanilla extract until light and fluffy.
- Add the egg and beat for about 20-30 seconds or until well incorporated.
- Gradually beat in flour mixture. Gently stir in white choco chips and roasted hazelnuts.
- Wrap the dough with cling wrap and refrigerate for 2 hours.
- Drop by rounded tablespoon onto ungreased baking sheets and bake for 8 to 10 minutes or until golden brown.
- Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

I need to start making it a habit to always have our cookie jar filled. I cant seem to make them as fast as they are eaten!! These sound wonderful. I love hazelnut and white chocolate together and I always make my cookies nice and thin!!
I love hazelnuts and for some reason never think to put them in cookies. I certainly will after seeing this because it is making me crave them. Yum!

Having a cookie jar full of cookies is way to dangerous for me. I have no will power, especially if these tempting cookies were in there.
I think your jar is better than my jar. My jar is empty every other day… there’s these people in my house with big (cookie) appetites. I’d love to replenish the jar with your lovelies, though… I love me some chewy cookies! With hazelnuts!
I try not to have the cookie jar filled! I make them, eat them and beg my Husband to take them to work, so I don’t keep eating them. :) Your cookies sound amazing!!!!!!!!

This is going to sound weird. I don’t have a jar. But I *do* have a freezer. Typically, I’ll make a full recipe’s worth of cookies. I shape them into balls, and flash freeze them on a tray. Then I put all but about 4 into the freezer in a ziptop bag. I bake up the 4, and then leave the rest in the freezer. We bake them up 2 or 4 at a time when we get hit with a craving, but try not to do more than that. I find that having the extra step of having to turn the oven on, and wait for them to bake, keeps me from doing this *too* often, while still keeping me from running to a bag of Oreos. (Well, most of the time.)
I’ll have to try with this recipe, because I love hazelnuts, and I LOVE white chocolate.

i love the look of these cookies! I do love to have a never ending supply of cookies around the house too and also at work so I could munch on when I am hungry! Yum!
Usually instead of a jar of cookies I keep a batch of frozen cookie dough, formed into cookies, ready to go in my freezer. Whenever I want one (or three…) I just pop them in the oven!

White chocolate is one of those things that I pretend like I don’t like until I eat it and remember how good it can be. But I’m not even going to try to pretend like I don’t want one of these babies.
I wish I had the chance to bake more often. I normally make a full recipe and freeze half the dough for later on. Then I just have to wait for it to defrost and stick it in the oven!
A never-ending cookie jar would be so dangerous in my house! I try to do most of my baking for get-togethers with friends. This way, I can leave the leftovers and spread the wealth!

I don’t have a cookie jar. : ( But I always save a few cookies in the freezer! When I need one or two, I pop them in the microwave for 30-60 seconds and my sweet tooth is satisfied! lol, i’m definitely like you with the cookie jar – though sometimes it might be cupcakes or brownies or rice krispies treats or something for a bit of variety. i need that bit of sweetness around, it is definitely comfort for me. these cookies look absolutely wonderful and would be a delicious addition to the cookie jar.

Oh you brought up a topic that I was always curious! May I ask a question? How long do you keep cookies in there? Since I don’t bake much, when I bake cookies, they go really fast – mostly consumed by me who is so excited to eat…. but I wonder how long I can keep in those cookie jars. A few days or a week? I’ve never used hazelnuts in cookies or any baked goods. Must be delicious with white chocolate!
Nami – They could easily last two weeks but you need to make sure you store them properly. If you like to eat them fresh, bake with half the dough and freeze the remaining. This recipe is great and I really doubt they’ll last long in your house. :)
